With lockdown still upon us, we're celebrating every occasion here at MiniChefs HQ and pancakes are definitely a firm favourite! They make a regular appearance here so if anyone needs it, this is my tried and very much tested recipe which I think is as easy as 1, 2, 3! Pancakes are great for the MiniChefs to get involved with, there are only 3 ingredients so attention spans can be held and who doesn't love the theatre of who can achieve the most flips! The question I guess is sweet or savoury as your filling? We are very traditional here, lemon & sugar all the way!

Thank you very much to everyone who placed an order, despite the snow & ice they have left today and will be with you within 3-4 days (unless you specified a date for delivery). I have sent an email advising of the ingredients needed to complete the bake (this month it’s just an egg and some oil), in addition I have sent a separate email with your tracking information. If you do not see the email, please double check your junk files! If you still wish to place an order, don’t panic there is still time, just pop through and place order and I’ll get it out to you ASAP. I have changed the boxes; now they are slightly smaller to ensure the ingredients are unable to move around as much during transport, they are also red which fits more with my brand colours, they do however, still fit through your letterbox! Thank you all for becoming members, here you will see updates from me, information on the Make It Boxes and various posts (mostly about food!) that I hope you will find interesting! So we are on day 7 of 2021 and so far have had another national lockdown and another Trump tantrum. Goodness knows what the rest of the year will offer! In the meantime, I’m very excited to dispatch the Make It Boxes next week. We are starting the year with a delicious Tea Cake Loaf, it’s a fairly simple recipe to get started and only needs an egg and an orange from your kitchen. These boxes are intended to be an extension of the cooking club that I am unable to offer at the moment, so not only will the MiniChefs benefit from the excitement of the bake, there are those literacy skills to be enhanced which is helpful during these home schooled times! I would love to hear your feedback on the boxes, the app, the website or anything else that you would like to being to my attention!
